Nearly 2 years ago I was diagnosed with Celiacs, after suffering for more than 16 years with the disease. I went to numerous doctors and was tested for every known ailment to man. Everyone thought I was crazy and that it was just in my head. Thanks to the persistence of one doctor that believed in me.... we were able to diagnose and treat the problem. Although it was extremely difficult in the beginning...due to heightened awareness, life with Celiacs is much easier to live with.
People with Celiacs have an intolerance to Gluten, a protein found primarily in wheat, barley and rye. The affects of gluten on the small intestine can be very dangerous if gone undiagnosed. Gluten destroys the villi in the small intestine making it nearly impossible for a person with Celiacs to absorb the required nutrients and vitamins that the body needs to function. Over time, this can cause the deterioration of your other vital organs.
My purpose of this blog will be to provide information on symptoms, new treatments, great recipes, and everything else Celiac. With 1 in every 131 persons suffering from Celiacs.....many without even knowing it.... I hope to bring alot of information together in one place to make life a little easier for the next person who finds themselves in this strange world of gluten-free.
